Mix meat, 1/2 green onion, green pepper, mushrooms, chilies and one cup of cheese in bowl. Divide mixture evely among 6 to 8 tortilla shells, roll up and place seam side down in a casserole.
Pour entire egg mixture over tortillas. Cover and refrigerate overnight.
Cook in 375 degree oven for 45 to 50 minutes. Remove cover and sprinkle remaining cheese over dish. Cook an additional 10 minutes uncovered or until eggs are done. Serve with remaining green onion, sour cream and salsa. Serves 6 to 8.
