Place zucchini in a large saucepan and cover with water. Bring to a boil, and cook 20 minutes or until zucchini is very tender. Drain and mash in colander with a potato masher or fork.
Combine juice and next 7 ingredients (through cayenne) in a bowl and stir with a whisk. Add zucchini and toss well. Cool. Sprinkle with cheese. Serve with crackers. Serves 4 to 6.
