Pour warm water in a medium bowl or mixing bowl. Add salt, sugar and yeast. Stir together and add olive oil.
Stir in 3 cups flour and mix. Knead and add at least 2 more cups flour until it is not sticky. Cover bowl and let rise 1 to 2 hours until double in size. Cover cookie sheet with corn meal and shape dough into 2 loaves and place on cookie sheet. Let the bread rise slightly again. Slash top with sharp knife and brush with egg white. Top with salt or seeds if desired.
Heat oven to 400 degrees and put a soup bowl of hot water on the bottom rack. Bake 35 minutes or until done.
