Combine first 4 ingredients in a large saucepan over medium-high heat and bring to a simmer. Add cheese and stir until melted. Remove from heat and stir in cooked rice and broccoli. Transfer mixture to an 11X7-inch baking dish coated with cooking spray. Sprinkle with crumbs or onions. Cover and bake 350 degrees for 15 minutes. Uncover and bake an additional 15 minutes. If frozen, thaw before cooking. Serves 8.
