Smoked Salmon Spread
Sometimes I make this with left-over cooked salmon and add a small amount of liquid smoke. Serve with crackers and Coeur d'Alene Cellars No. 6 White or Syrah.
6 ounces smoked salmon, trout, or kokanee
8 ounces cream cheese
1 tablespoon lemon juice
2 tablespoons horseradish
1/4 teaspoon salt
1/2 cup onion, minced
1/2 cup pecans, chopped, toasted in oven (optional)

Instructions
Clean salmon of bones and skin and place in food processor with cream cheese, lemon juice, horseradish, and salt. Blend until smooth and put in bowl. Add onion. Sprinkle with pecans. Makes about 2 cups.
