Sarah's Chunky Salsa
Serve with corn chips and Coeur d'Alene Cellars Switchback. Can be put in 5 to 6 sterilized pint jars and processed 15 minutes. A good way to use a surplus of garden tomatoes.
4 pounds tomatoes
2 green bell peppers
2 white onions
1-2 seeded jalepenos
1 teaspoon salt
1/2 teaspoon cumin
1 cup tomato juice
3 tablespoons white vinegar
1 cup chili sauce
1 tablespoon tabasco sauce
1/4 teaspoon cayenne (or to taste)
1 teaspoon lemon juice

Instructions
Chop all vegetables separately in food processor and put in large pan. Add rest of ingredients. Bring to a boil and simmer 1 to 1 1/2 hours until desired thickness.
