HUCKLEBERRY BUCKLE

Serve this delicious coffee cake with Coeur d'Alene Cellars No. 6 Red.

For cake:
3/4 cup sugar
1/4 cup soft shortening
1 egg
1/2 cup milk
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups fresh or frozen huckleberries

For topping:
1/2 cup sugar
1/3 cup flour
1/2 teaspoon cinnamon
1/4 cup soft butter

Spray a 9x9x2-inch pan with cooking spray.  Mix sugar, shortening and egg thoroughly.  Stir in milk. Blend dry ingredients and stir in.  Do not over mix.  Spread batter in pan.  Sprinkle with streusel topping.  Bake 45 to 50 minutes or until toothpick comes out clean.  Serves 9.
